Pago | Salt Lake City – Brunch


I am a bruncher.

It is by far, my most favorite meal of all time. And I had one of the best brunches of my life this past weekend at Pago. It wasn’t my first brunch there, but something about this experience was different.

Because I have never written about Pago (why have I never written about Pago!?!?), let me tell you a few things about it. Pago is a wonderful farm to table restaurant located in the 9th and 9th district of Salt Lake City – a lovely little corner of town that is home to many great local businesses and restaurants. The space was built in 1910 and uses reclaimed wooden tables, which makes it feel old world, but modern at the same time. Pago is also very green and sustainable – in both its building and its food. Pago uses products from local farms and artisans – and you can really taste that freshness. Pago has an inviting atmosphere and Salt Lake City locals have embraced it whole-heatedly. Scott Evans, owner and operator, has been in the SLC restaurant industry for years (also owns local restaurant, FINCA) and really knows and caters to his local audience. We are all very happy about that.

This particular brunch was sort of a bridal brunch with some of my closest girlfriends (Rachel, I love you & we missed you!). So as you can imagine we were super chatty, slow to order, and maybe a bit disorganized. HOWEVER, our server was outstanding and catered to our every whim. (I can’t remember his name, this amazing server, but a nice young man with a pony tail and nose piercing! Ask for him!). He made me the best bloody mary at my request for less spice – twice. $3 bloody marys and mimosas start any brunch off right, but a bloody mary made just for ME is even better.

It seems that Pago’s brunch menu has gotten much larger since the last time I was there. The choices were more diverse – which might be due to the change of season. We started with the Beets under the appetizer section (yogurt, grains, honey wine vinegar, spring herbs $9). This was a lovely dish – very earthy with a hint of sweetness. The grains added great texture…and just look at it! What a beautiful presentation.

Everyone really loved the meals that they ordered – the Pago Burger, Huevos Rancheros, Benedict, and Pago Breakfast all got rave reviews. However, I think I was the winner with my Utah Trout brunch. This was one of the best meals I have had in a long time – not just brunches. The trout was amazing – not a hint of fishiness, perfectly cooked, with the skin seared to crisp delicousness. The trout sat atop creamy grits and was finished off with a poached egg, citrus hollandaise, tasso ham, and greens ($15). Pago’s hollandaise is one of my favorites that I have ever had – light, creamy, and with a citrus zest. It is beautiful. This dish was perfection.

We also ordered the Dutch Baby Pancake for the table (strawberry rhubarb compote, powered sugar, $10). This baby was beautiful, crispy on the outside, perfectly doughy on the inside, sweet, and delicious. It was great for all of us to munch on after our savory meals.

I have to thank Pago for an amazing time and wonderful food. It was by far, my most positive experience at Pago and it made for a wonderful celebration with great friends. The attention to detail was definitley noticed. Pago very much reinforced the idea that great food can really set the mood and make any get together something special.
