Day One

Some tasty items from today’s menu:

Breakfast:  1 hard boiled egg, 1 string cheese

Lunch: Shredded lettuce with chicken salad (low-fat mayo) and 15 cashews

Snack: Sugar-free pudding (yum), 1 string cheese

Dinner:  Roasted brussel sprouts with sea salt and chicken breast stuffed with goat cheese.  DELISH!

DAY ONE = SUCCESS!

  1. Do you roast brussel sprouts only with sea salt? How long did you cook them for?
    I’ve been wanting to try them and this looks like a great way for me to try them!

  2. Hey Emily! Good question. I cut them in halves and then put them in a bowl with sea salt, some olive oil, fresh garlic, and a bit of red wine vinegar. I cooked them on 350 for about 30 – 40 minutes, shaking the pan every once in a while to make sure they roasted even. They were delish!

  3. Yea! I absolutely went out and bought some brussel sprouts. I don’t have any red wine vinegar, but I’m sure it will still be tasty with sea salt, olive oil and garlic! I’m trying them tonight along with your goat cheese stuffed chicken! So excited!
