Hub & Spoke Diner | Salt Lake City


We have all been waiting, right? Well, it is here – the new Hub & Spoke Diner. Located in the old FINCA location on 1300 South and 1100 East; this diner is everything you want for breakfast, lunch, or dinner (and BREAKFAST ALL DAY!). Of course, that is to be expected from the owners of Pago, FINCA, and East Liberty Tap House. My expectations were high – and I wasn’t disappointed. Thank you Scott Evans, and Phelix Gardner. You guys are sort of my local heroes.

The atmosphere is familiar, if you were a patron of the old FINCA – but there are some fun changes…especially the beautiful deer mural, which makes you feel surprisingly cozy. This diner definitely has the “cool” going on, but it is the quality food, great coffee (local La Barba), and little things like boozey milkshakes that set it apart. The food is hearty – you won’t leave unsatisfied. The prices are on point. The service is wonderful. And yes – you can get an ice cold beer, a delicious cocktail, or an evening glass of wine. There is literally something on the menu for any time of day.

I don’t see pozole on many menus, so when I do, I order it. Hub & Spoke had a very flavorful pozole, which was a great way to start a lunch break. A little kick of spice, a beautiful lime wedge, and savory/tender pork. Delish!

My friends and I were so torn on what to order for our meals. The breakfast menu is to die for, with options like sour cream flapjacks, pound cake french toast, or the chicken and waffle breakfast sandwich – but the stand out item to me was the crab salad benedict (cornmeal griddle cake, avocado, tomato, arugula, poached eggs, hollandaise, potatoes). What really made this dish stand out for me wasn’t the crab, actually, but the cornmeal griddle cakes. They were awesome and such a welcome change for a benedict.

The sandwiches on the lunch menu all sounded pretty amazing too. And they were definitely the epitome of comfort food. Patty melt. Tuna melt. Ruben. Burger. But each one with a little something different – something special. The tuna melt (albacore tuna salad, cheddar, sour dough) was a favorite ordered to the table – creamy, rich, wonderful. The tuna salad had amazing flavor and seasoning, and the cheese and bread were high-quality. Such a great sandwich. The open-faced roast beef (cheddar, caramelized onions, arugula, mustard horseradish jus) was literally dripping with flavor; tender roast beef – and the plate had just enough jus to keep things moist and yet, not get soggy. It was pretty much dream-worthy.
